Mixed Berries Protein Parfait by Abi Limelight

Who doesn’t love a fresh berry parfait? Our Mixed Berries Protein Parfait recipe is the perfect brunch bite, midday snack, or after-meal dessert. Loaded with all the fresh berries you want, this parfait is packed with even more goodness from Greek Yogurt, almond milk, chia seeds, and Vanilla Raw Organic Protein powder to make this a powerhouse parfait. Easy to make and sure to please, this will become a go-to recipe year-round.

Ingredients

  • ½ cup Greek yogurt
  • 1 cup almond milk
  • 1 scoop GOL Raw Organic Protein Powder, Vanilla
  • 3 Tbsp. Chia Seeds 
  • ½ tsp. vanilla extract
  • 1 ½ Tbsp. maple syrup, divided
  • 1 ½ cups mixed berries (blueberries, strawberries, blackberries, raspberries, etc.)

 

Directions

  1. In a large mixing bowl, combine yogurt, almond milk, chia seeds, vanilla, 1 tablespoon maple syrup, and protein powder. Stir well until fully mixed.
  2. Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 30 minutes, or until it thickens to a pudding-like consistency.
  3. In a separate bowl, combine 1 cup of mixed berries with the remaining ½ tablespoon maple syrup. Mash the berries slightly to release their juices and mix well.
  4. In serving glasses, add a layer of crushed mixed berries at the bottom.
  5. Spoon a layer of the chia pudding over the berry mixture. Repeat the layers until the serving glass is full.
  6. Finish by topping the pudding with more mixed berries. Serve immediately or chill until ready to enjoy.
