Spinach & Coconut Soup by Body Ecology

Creamy, Comforting, and So Good for Your Gut!
This warming veggie-packed soup blends spinach, cauliflower, and creamy coconut milk for a deeply nourishing meal. It's loaded with fiber, antioxidants, and just a hint of spice to keep things interesting!
How to Make It:
1️⃣ Sauté 1 chopped onion and 2 crushed garlic cloves in 1 Tbsp coconut oil or ghee until tender.
2️⃣ Add 2 cups veggie stock + ½ head cauliflower. Boil 8 mins.
3️⃣ Add 2 bunches spinach until wilted. Blend smooth.
4️⃣ Stir in 1 cup coconut milk, ¼ tsp nutmeg, ½ tsp sea salt & cayenne. Simmer gently.
5️⃣ Serve hot, drizzled with extra coconut milk + a pinch of cayenne.
